How to Survive The Zucchini Flood From Your Garden

If you haven’t started seeing it already just get ready because it’s coming! If you were wondering what I am talking about, that would be the zucchini flood from your garden. If you have more than a couple of these plants in your garden you will likely be wondering how in the world you are going to use it all up besides leaving them on your neighbors doorstep and running! One thing is for sure and that’s that there is always some fun and delicious ways to use zucchini from your garden.
Here are a few of my favorite Ways to use zucchini:
- Cut them up and serve them in salads or on vegetable trays with dip.
- Sauté them in olive oil and add in your favorite spices: This makes a delicious side to any summer meal.
- Freeze it: Many people don’t realize that you can freeze zucchini. It’s very simple to do and you can use it later in soups, breads, kabobs, stir-fry and much more. Check out this great tutorial on how to freeze zucchini.
- Fried Zucchini: This is one of the most popular ways of serving zucchini and Amy has a great recipe. I like to serve these with a little bit of Parmesan on the top and a side of marina sauce.
- Three Cheese Zucchini Stuffed Lasagna Rolls: This is one of my favorite zucchini recipes; even my picky little eaters clean their plates. This is a great recipe that can be made ahead of time and freezes great too!
- Creamy Zucchini and Carrot Soup: This is a great winter recipe to use some of the zucchini you have frozen. It’s a quick and simple recipe that will have dinner on the table in less than 30 minutes. Serve it up with some crusty bread and enjoy!
- Homemade Oven Baked Zucchini Chips: I’m a huge fan of chips and these are sure to make you feel a little better about snacking.
- Zucchini Brownies: It’s chocolate that’s healthy for you! Need I say more? ☺
- Blueberry Zucchini Muffins: These delicious morning muffins are sure to be a hit
- Homemade Zucchini Bread: I love this recipe because it’s light and airy and has a great flavor.
- Healthy Zucchini Pancakes: My kids LOVE pancakes and with a little syrup on top they have no idea its got veggies in it.
- Healthy Chocolate Zucchini Muffins: I could eat these muffins all day!
