One thing that I have found to be true in my 11+ year homeschooling journey, is the need to be able to have easy meals from time-to-time that will satisfy our hungry growing family as well as not burn a hole in our pocket. Have you ever had one of those homeschool days where you just want to pull your hair out, and the last thing you are concerned about is making a gourmet meal? Yes? Me too. Truth be told, it happens more often than I’d care to admit. But the wonderful thing is, I have found some great resources over the years that help make those days a bit less of a burden. I have shared with you some of the cookbooks that we’ve used to give us more bang for our buck as well as teach us some ways to make gourmet cooking more affordable by eating it at home.
Today I wanted to share with a fabulous recipe that was not only tasty, but very easy on the pocket book. We got this recipe from our yearly subscription to Emeals, a meal planning service that gives you many different choices of cuisines to help your menu planning dilemmas. Without any further ado, here is the recipe for Taco Chicken Pie With Avocado Salad.
- 1 pie crust
- 1 package taco seasoning
- 2- 3 bone/skinless cooked chicken breasts, chopped
- 1 cup shredded cheddar cheese
- 4 eggs
- 1 cup half and half cream
- 2 oz chopped green chilies
- 1⁄2 c salsa
- 1 T melted butter
- 1⁄4 c sliced black olives
- salsa & Ranch dressing for salad
- Bake pie crust @ 400° for 7 minutes.
- Toss 1⁄2 taco seasoning with chicken & place in pie crust.
- Top with 1 cup cheese & 1⁄2c salsa.
- Beat eggs,other1⁄2 taco seasoning, butter, & cream.
- Stir in black olives & 2 oz green chilies.
- Pour evenly into pie crust.
- Bake @ 400° for 30-35 minutes.
- Cool for 5 minutes.
- Slice & serve
- Divide greens into individual salads & top with chopped avocado.
- Serve with salsa mixed with Ranch dressing.
We ended up savoring every last bite of the two taco chicken pies we made. No left overs this time. But it was so little effort for such a good tasting meal – it was fine by us!
