I am a crockpot lover! I think every meal should be cooked in them. Especially since I don’t tend to get dinner on the table at a reasonable hour unless we HAVE cooked our meal in that handy appliance.
One of my favorite things to eat from the slow cooker is soup. There are so many different soups you can make, the possibilities are endless! Sometimes February is one of the coldest months we have and a hot bowl of soup is something that will warm me up from the inside out.
Here are 3 easy soups that are crowd pleasers!
Taco Soup
1 pound ground beef
1 onion (chopped)
2 cans chili beans
1 can corn
1 can tomato sauce
1 can rotel (diced tomatoes and green chilies)
½ can water
2 T taco seasoning (or one packet)
Place all ingredients in slow cooker. Cook for 4 hours on high or 8 hours on low.
Chicken & Noodle Soup
Ingredients
2 cans chicken broth
1/2 c. carrots (diced or grated)
4 large boneless, skinless chicken breasts
1 t. onion powder
1/2 t. garlic powder
1/2 t. Italian seasoning
hot water
20 oz medium egg noodles
salt & pepper to tasteDirections
Pour broth, carrots and spices into crockpot. Place the breasts in the broth and then cover with lid and cook on low for 6 hours.
Once the 6 hours is up, remove chicken and shred. Place back into the broth. Add in the noodles with enough hot water to cover the noodles. Cook on high another 30 minutes, serving as soon as the noodles are tender. (Alternatively, you could cook the noodles on the stove and add them right when you’re ready to eat). Salt & pepper to taste.
For a creamier soup, add a cup of milk or half and half when you add your noodles, taking care not to cook too long or at too high heat or the milk will begin to clump and separate.
French Stew
3 pounds beef stew meat
1 10.75 oz can beef consommé (a Campbell’s Soup)
3 large peeled & sliced carrots
1 can green beans, drained
1 10 oz packages of frozen peas
1 16 oz can peeled tomatoes
1 c. water
1/3 c. red wine vinegar
1 T brown sugar
½ c. bread crumbs
1 bay leaf
1 T salt
¼ t. pepper
Place all ingredients in slow cooker and stir well. Cook on low for 8 hours or high for 4.
