I don’t have any specific suggestions . . . but I went through my older 3 kids and had them pick out their top 2 favorite lunches with them all agreeing on two more. That gave me 8 different meals (we only eat at home 4 days a week) and at least we only had something every 2 weeks. I may have them re-pick again for summer.
When its cold out we do crock pot potato soup, mac and cheese, and other soups. We also love cheese quesadillas, veggies and hummus, pimento cheese and crackers, apples and peanut butter and of course left overs from the night before. Oh and we just found a recipe for cock pot enchiladas that my kids love.
Sandwiches for lunch, or a quick pasta and sauce with cucumber and tomato on the side, or defrosted leftover soup. (I always make more soup than I need and freeze it in a plastic pitcher.) Quesadillas are great. I also try to keep washed salad greens in a plastic zipper bag with a couple paper towels to keep them crispy in my fridge. that makes salad a super easy addition. Popcorn, fruit like apples and bananas, and carrots and celery are a great and fast way to fill in the holes. I also serve a lot of leftovers for lunch, making more of something that is popular so there will be a chance to enjoy it again later.
We eat sandwiches, fruit and carrots/celery/broccoli with hummus. The sandwiches are usually PB&J, but sometimes lunch meat, tuna or egg salad. Fruit is usually whatever is in season. Occasionally we will eat leftovers.
We oftentimes eat boiled eggs, nitrate-free ham or salami, fresh fruit in season, and a side of chips or crackers. Other times it is peanut butter toast or homemade oatmeal with a side of fruit. If no one is having colds or allergies we may do ham roll ups with pepperonis and cheese inside with a side of fruit and/or yogurt.
We do “musgo”… you know… open up the fridge and say “that mus’ go and that mus’ go”. Seriously, we do leftovers. I make extra with the intentions of lunches for the next day. I know a lot of people don’t, or won’t, do leftovers. I never understood why. Fast and easy! Everyone gets what they want. Way cheaper than sandwiches, at least in my opinion. I do keep flatmeat in the fridge as an option, but most times they choose the leftovers. 🙂
Eggs and “breakfast” dishes are stand-bys around here, because they are easy to throw together and we almost always have the necessary ingredients on hand. For lunches, I usually make a large pot of soup, something that can be eaten as leftovers the next day or for dinner, depends on what our day is like. We also do sandwiches, wraps, tortillas with veggies. Hummus and veggies. My girls like to make pizzas. We buy mozzarella cheese and Mama Mary’s pizza crust (you get 2 in a pack) and we do tomato sauce. I like to pick out the garden veggie chunky spaghetti tomato sauce and use that. Top with favorite toppings (we do broccoli, onions, mushrooms, black olives, bell pepper and spinach) and bake. It only takes about 10 minutes or less. We go ahead and bake both of them, saving one for dinner time. Pair that with a salad, veggie sticks or fresh fruit and you have a meal.
